Napa Cabbage Salad with Buttermilk Dressing

  • 1/2 cup buttermilk, well shaken
  • 2 Tbs. mayo
  • 2 Tbs. cider vinegar
  • 1 Tbs. sugar
  • 3 Tbs. finely chopped chives (or scallions or garlic scapes)
  • 1 Napa cabbage, cored and thinly sliced crosswise (or 1/2 of one, depending on size)
  • 5-6 radishes, diced

Whisk together the first five ingredients, then add chives. Toss radishes and Napa with dressing. This would probably be delicious with minced garlic scapes, hard boiled eggs, or crumbled blue cheese. Thanks, Smitten Kitchen!
